Yield:
3 (makes about 3–4 dozen cookies depending on cutter size)

Ingredients

  • 1 c. granulated sugar
  • 1/2 c. butter softened
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/2 c. sour cream
  • 3 1/4 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1 (16 oz.) vanilla frosting
  • Red, white, and blue sprinkles
  • Red or blue Pop Rocks candy

Instructions

  1. Make the dough: In a large bowl or in the bowl of a stand mixer, cream together the granulated sugar and softened butter until light and fluffy. Add the eggs, vanilla extract, and sour cream, and beat until fully combined.
  2. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until a smooth dough forms.
  3. Chill: Divide the dough in half and shape each half into a disc. Wrap the discs in plastic wrap and refrigerate for at least 4 hours (or overnight). Chilling firms the dough and makes it easier to roll and cut clean shapes.
  4. Roll and cut: When the dough is thoroughly chilled, work with one disc at a time and keep the remaining dough refrigerated. On a well-floured surface, roll the dough to about 1/4-inch thickness. Use a star-shaped cookie cutter to cut the cookies and transfer them to a parchment-lined baking sheet, leaving a little space between each cookie.

  5. Bake: Preheat the oven to 350°F (175°C). Bake the cookies for 6–8 minutes, or until the edges are just set and the bottoms are lightly golden. Avoid overbaking to keep cookies tender.
  6. Cool and decorate: Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely. Once cooled, spread a thin layer of vanilla frosting on each cookie. Immediately sprinkle with red, white, and blue sprinkles.
  7. Add Pop Rocks: For the best popping effect, add the Pop Rocks candy just before serving. If you sprinkle Pop Rocks too far in advance, they will lose their fizz. You can either scatter a few crystals over each frosted cookie or serve the Pop Rocks alongside the cookies and add them at the table.

Tips and Variations

– To save time, use store-bought refrigerated sugar cookie dough and follow package directions for chilling and baking; then finish with frosting, sprinkles, and Pop Rocks.
– If you prefer a milder texture, chill dough longer before rolling. For crisper edges, roll slightly thinner and bake a minute or two longer, watching closely.
– Try different cutter shapes and color combinations for other holidays or themes.

Storage

Store frosted cookies without Pop Rocks in an airtight container at room temperature for up to 3 days. If you plan to keep them longer, refrigerate the frosted cookies and bring them to room temperature before serving. Always add Pop Rocks just before serving to preserve their popping effect.

Enjoy these festive Firecracker Cookies as a playful, crowd-pleasing treat—particularly fun for celebrations where a little popping surprise makes the dessert memorable.
