I’m a big fan of sheet pan meals — they’re straightforward, fast, and cleanup is a breeze. This Sheet Pan Cranberry Chicken Sausage recipe is a perfect example: just a few minutes to prep, one pan to roast it all, and dinner on the table in about 30 minutes. It’s cozy enough for cooler evenings and bright enough to feel special.

The idea came from my mom, who mentioned a seasonal cranberry chicken sausage she’d been roasting with vegetables. I couldn’t find that exact sausage near me, so I used a sweet apple chicken sausage that complements the fruit and vegetables beautifully. If you prefer, any mild, slightly sweet chicken sausage will work well here.

To keep the dish colorful and seasonally inspired, I use diced sweet potatoes, fresh cranberries, sliced apple, and sweet onion. The natural sweetness of the potatoes and apple balances the tart cranberries and savory onion. Because each ingredient has such distinct flavor, I keep seasoning simple: olive oil, salt, pepper, and just a pinch of cinnamon to tie the flavors together.

Everything roasts together so the fruit and vegetables caramelize and mingle with the sausage juices. The result is a hands-off, robust fall entrée that’s equally good for weeknight family dinners or casual gatherings. Serve it on its own, over rice, or with a simple green salad for a complete meal.

TIPS & TRICKS:

  • You can use any chicken sausage you enjoy; look for sweet or apple-flavored varieties for the best balance with cranberries. If you find a cranberry-flavored chicken sausage seasonally, it will also be delicious.
  • Serve this with steamed rice, quinoa, or your favorite grain to make the meal more filling and to soak up the pan juices.
  • To ensure even cooking, cut the sweet potatoes into small, uniform pieces — about the size of a cranberry — so they finish in the same time as the other ingredients.
  • For extra caramelization, spread the ingredients in a single layer without overcrowding the pan. A hot oven (425º F) helps develop color and concentrated flavor.
  • Leftovers keep well in the refrigerator for 3–4 days. Reheat gently in a skillet or oven to preserve texture.

Ingredients

  • 3 medium sweet potatoes, peeled & diced small*
  • 6 ounces fresh cranberries (about 1 1/2 cups)
  • 1 large apple, sliced
  • 1 medium sweet onion, sliced in wedges
  • 1 pack sweet apple or cranberry flavored chicken sausage, sliced
  • 1 tablespoon olive oil
  • salt, pepper, & cinnamon to taste

Instructions

  1. Preheat the oven to 425º F (220º C).
  2. Arrange the diced sweet potatoes, cranberries, apple slices, onion wedges, and sliced sausages on a rimmed sheet pan. Drizzle with olive oil and season with salt, pepper, and a light sprinkle of cinnamon. Toss everything so the oil and seasonings coat the ingredients evenly.
  3. Spread items into a single layer and roast for 25–30 minutes, stirring once halfway through, until the sweet potatoes are tender and edges are caramelized. Serve hot.

Notes

*Aim for sweet potato pieces roughly the size of a cranberry so they cook evenly. If your sausage is pre-cooked, you can add it later in the roast to avoid overbrowning; raw sausages should be sliced and roasted with the vegetables.
