Ingredients

  • 2 tablespoons light corn syrup

For the Filling

  • 24 ounces cream cheese, at room temperature
  • 1 1/4 cups powdered sugar, sifted
  • 2 1/2 teaspoons vanilla bean paste or vanilla extract
  • 1/4 cup light corn syrup
  • 8 ounces whipped topping, thawed

For the Topping

  • 1/2 cup granulated sugar
  • 2 tablespoons light corn syrup
  • 1 teaspoon water

Instructions

  1. Line a 9×13-inch pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Make the crust: crush the cookies into fine crumbs. Combine crumbs with melted butter and corn syrup until evenly moistened. Press firmly into the bottom of the prepared pan and chill while you make the filling.
  3. Make the filling: beat the cream cheese until smooth. Gradually add the sifted powdered sugar and continue beating until combined. Stir in the corn syrup and vanilla, then beat 1–2 minutes more until silky and lump-free.
  4. Gently fold the thawed whipped topping into the cheesecake mixture with a rubber spatula until fully incorporated. Spread the filling evenly over the chilled crust, cover, and refrigerate at least 8 hours or overnight.
  5. Make the cracked sugar topping just before serving: combine the granulated sugar, corn syrup, and water in a small saucepan. Cook over medium heat, stirring until the sugar melts and the mixture reaches a golden amber color.
