Holiday Baking

Holiday baking has a way of taking over the kitchen in the best possible way. One minute you are planning to bake a simple batch of cookies, and the next you are surrounded by flour, butter, mixing bowls, cooling racks, and the wonderful smell of spices coming from the oven. These Brown Butter Oatmeal Ginger Cookies are exactly the kind of recipe that belongs in that happy, slightly messy season.

They are cozy, flavorful, and full of classic holiday cookie ingredients. The combination of brown butter, oats, ginger, cinnamon, molasses, nutmeg, and allspice gives them a deep, warm flavor that feels special without being complicated. If you enjoy chewy oatmeal cookies and spiced ginger cookies, this recipe brings the best of both together in one delicious bite.

Brown butter is the ingredient that makes these cookies stand out. It adds a rich, nutty flavor that plain melted butter cannot quite match. Once the butter is cooked until golden brown specks appear, it brings a deeper taste to the dough and pairs beautifully with the molasses and spices. It is a small extra step, but it makes these oatmeal ginger cookies taste bakery-worthy.

Brown Butter Oatmeal Ginger Cookies

These Brown Butter Oatmeal Ginger Cookies are made for anyone who loves a cookie with texture and flavor. The oats give the cookies a hearty chew, while the brown sugar and molasses help create a soft center. The granulated sugar adds sweetness and helps the edges bake up lightly crisp. Together, the ingredients create a cookie that is thin, chewy, warmly spiced, and easy to love.

The spices are what give these cookies their holiday personality. Ginger brings gentle warmth, cinnamon adds sweetness, nutmeg gives depth, and allspice rounds everything out. None of the flavors are overwhelming; they work together with the brown butter and oats to create a balanced cookie that tastes comforting and festive.

For the best chewy texture, bake the cookies just until the edges are slightly golden. They may look a little soft when they come out of the oven, but they will continue to set as they cool. Letting them cool completely is important because it gives the centers time to firm up while staying wonderfully chewy. Once cooled, they are ready to enjoy with milk, coffee, tea, or as part of a holiday cookie tray.

If you are planning a holiday baking list, these cookies deserve a spot on it. They are simple enough for a weeknight baking session but flavorful enough for gifting, parties, or cookie exchanges. The dough comes together with familiar pantry ingredients, and rolling the cookie dough balls in sugar before baking gives them a lovely finish.

These cookies disappear quickly, especially when served fresh from the cooling rack. They are the kind of cookie that makes people reach for just one more, thanks to their chewy oatmeal texture, spiced ginger flavor, and rich brown butter base.

Ingredients

  • 1 cup unsalted butter
  • cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • ¼ cup molasses
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 ½ cups old fashioned oats
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 ½ teaspoons ginger
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • Sugar for rolling

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Add the butter to a small pot and place it over medium heat.
  • Melt the butter, stirring frequently, and continue cooking until brown specks form. This usually takes about 10 minutes. Once the butter begins to brown, remove it from the heat immediately so it does not burn.
  • Let the brown butter cool slightly for 10 minutes.
  • While the butter cools, combine the flour, oats, baking soda, salt, cinnamon, ginger, nutmeg, and allspice in a medium bowl.
  • In a large bowl, use an electric mixer to beat together the brown butter, granulated sugar, and brown sugar until well combined.
  • Add the eggs one at a time, beating after each addition.
  • Add the molasses and vanilla extract, then beat until combined.
  • Slowly add the flour and oat mixture, beating until the dough comes together. Scrape down the sides of the bowl as needed.
  • Scoop the dough into balls, using about 2 tablespoons of cookie dough for each cookie.
  • Roll each dough ball in sugar and place on the prepared baking sheet.
  • Bake for 9 to 11 minutes, or until the edges are slightly golden.
  • Let the cookies cool completely before serving.
  • Enjoy.
