When my friend Kylie told me her birthday would be a bread-themed potluck, I wanted to make something special. While scones aren’t technically bread, they’re certainly bread-adjacent and perfect for sharing. I adapted my scone master recipe to highlight one of Kylie’s favorite flavors: cinnamon. To make the scones more exciting, I added salted caramel chips, dark chocolate chips, and chopped walnuts for texture and contrast.

The combination of warm cinnamon spice, melting dark chocolate, chewy caramel chips, and crunchy walnuts makes these scones an easy crowd-pleaser. People at the party asked for the recipe, so I’ve written it out here with clear steps and a few tips to help you get consistent results at home.

If you prefer, you can make these with heavy cream or buttermilk depending on what you have. Using frozen butter and keeping the dough cold gives the scones a flakier texture and a taller rise. Below is the full recipe, ingredient list, and step-by-step method so you can recreate these cinnamon, salted caramel, chocolate & walnut scones at home.

Ingredients
- 2 cups all purpose flour (250g)
- 1/2 cup granulated sugar (100g)
- 1/2 teaspoon salt
- 2 1/2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 cup unsalted butter (1 stick; 115g), frozen and grated or cut into small cubes
- 1/2 cup heavy cream or buttermilk
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 cup walnuts, chopped
- 1/2 cup salted caramel chips
- 1/2 cup dark chocolate chips
Directions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a food processor or large bowl, combine the flour, sugar, salt, baking powder, and cinnamon. Add the frozen butter and pulse or cut it in until the mixture resembles coarse crumbs or a fine powder with pea-sized bits of butter remaining. This helps create flaky layers.
- In a separate bowl, whisk together the heavy cream (or buttermilk), egg, and vanilla extract. Add the wet ingredients to the dry mixture and mix just until combined. Avoid overmixing—the dough should be cohesive but still slightly shaggy.
- Turn the dough out onto a lightly floured surface. Gently fold in the walnuts, salted caramel chips, and dark chocolate chips so they are evenly distributed. Handle the dough minimally to keep it tender. If the dough feels very soft, chill it in the freezer for 10–15 minutes to firm up.
- Shape the dough into a round about 1 to 1 1/2 inches thick. Cut into rounds with a circular cutter or slice into 6–8 wedges with a sharp knife. Place the scones on the prepared baking sheet, leaving space between them. Chill in the refrigerator for at least 15 minutes (or the freezer for 10 minutes) before baking.
- Brush the tops with a little heavy cream, buttermilk, or an egg wash for a golden finish. Bake for 18–26 minutes, depending on size, until the scones are puffed and golden brown. Larger scones will need more time—check for a light golden color and a toothpick in the center coming out clean of raw dough.
- Remove from the oven and let the scones cool slightly on a wire rack. Serve warm or at room temperature. They’re delightful plain or with a smear of butter, cream, or a light drizzle of extra caramel if desired.
Recipe Notes & Tips
Using frozen butter and keeping the dough cold are the two most important factors for achieving tender, flaky scones. If you don’t have a food processor, you can cut the butter into the dry ingredients with a pastry cutter or two forks. For a richer flavor, use buttermilk; heavy cream will give a slightly denser, richer crumb. Swap the walnuts for pecans or omit nuts for a nut-free version.
Storage
Store cooled scones in an airtight container at room temperature for up to two days. For longer storage, freeze fully cooled scones in a freezer-safe container or bag for up to one month. Reheat in a low oven until warmed through for best texture.
