If you usually bake salmon, try pan searing for a quicker, crispier result. The method takes only minutes and delivers a delicious texture contrast between the crispy exterior and tender interior. A one-pound fillet serves about four people, making this an ideal weeknight main.

Pan Seared Salmon
A quick, healthy main you can prepare in minutes. Pan searing produces a crisp, golden crust while keeping the center moist and tender. Perfect served with a simple salad, roasted vegetables, or rice.
Ingredients
- 1 lb salmon (fillet, skin on or off depending on preference)
- 2 TBSP olive oil (or other high-heat oil)
- 2 TBSP salt (adjust to taste; coarse or rock salt like Himalayan works well)
- Freshly ground black pepper, optional
- Lemon wedges or fresh herbs for serving, optional
Instructions
- Remove the salmon from the refrigerator about 30 minutes before cooking to take the chill off; this helps it cook evenly.
- Cut the fillet into four portions. Pat each piece dry with paper towels to remove surface moisture — this is key to getting a good crust.
- Season the flesh side generously with salt. Add pepper if desired. If the salmon has skin and you like it crispy, you can season the skin lightly as well.
- Heat a skillet over medium heat and add the olive oil. When the oil shimmers, place the salmon in the pan flesh side down (or skin side down if you prefer to start with skin).
- Cook the first side without moving the fish for about 4–5 minutes to form a golden crust. Flip and cook the other side for an additional 4–5 minutes, depending on thickness and your preferred doneness. If you like the flesh side extra crispy, leave it on a minute or two longer, watching carefully to avoid overcooking.
- Remove from the pan and let rest for a minute. Serve with lemon wedges, a sprinkle of fresh herbs, or alongside your favorite side dishes.
Tips and Variations
Thicker fillets will need a little more time; thinner pieces cook faster. For even cooking, allow portions to come closer to room temperature before searing. To add flavor, finish with a pat of butter and a squeeze of lemon in the pan for the last 30 seconds, or top with a light herb dressing. Serve with roasted vegetables, steamed greens, rice, or a fresh salad for a balanced meal.
