Ingredients

  • 4 large fresh peaches, peeled and pitted (see notes if using frozen peaches)
  • 3/4 cup granulated sugar
  • 3 cups 2% or whole plain Greek yogurt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Peel and pit all 4 peaches. Cut three of the peaches into large chunks and place them in the bowl of a food processor with the sugar. Process until completely smooth.
  2. Add the Greek yogurt and vanilla to the puree and process again until well combined and creamy.
  3. Transfer the mixture to an ice cream maker and churn according to the manufacturer’s directions until it reaches a soft-serve consistency (about 20 minutes for many small machines).
  4. Meanwhile, dice the remaining peach. About 5 minutes before the end of churning, add the diced peach to the mixture to distribute small fruit pieces evenly.
  5. Serve immediately for a soft-serve texture or transfer to an airtight, freezer-safe container. Press wax or parchment paper directly on the surface, cover, and freeze until firmer if desired.
