Ingredients
- 4 medium ripe avocados, pitted and diced
- 2 tablespoons fresh lime juice
- 2 garlic cloves, pressed or minced
- 1 teaspoon salt
- ½ medium red onion, chopped
- ¼ cup fresh cilantro, mainly leaves, chopped
- 1 to 2 small jalapeños (or 1 serrano), seeded and chopped
- 1 medium pomegranate, deseeded (about 1 cup of arils)
- Optional: ½ cup crumbled feta
Instructions
- Scoop the avocado flesh into a medium mixing bowl. Add the lime juice, garlic and salt. Mash with a fork or potato masher until the mixture is creamy but still slightly chunky.
- Rinse the chopped onion under cold running water to mellow its bite, then pat dry with a paper towel so it doesn’t add excess moisture.
- Stir the onion, cilantro and jalapeño into the mashed avocado. Gently fold in half of the pomegranate arils so the flavors distribute without losing their texture.
- Transfer the guacamole to a serving bowl if desired. Sprinkle the remaining arils on top for color and crunch. Add crumbled feta if using. Serve immediately. To store leftovers, press plastic wrap directly onto the surface to limit browning and refrigerate up to two days.
